My neighbor, whom our kids think is their grandpa, is THE best. He is constantly looking out for us- cleaning out our gutters, fixing flat tires, bringing vegetables from his garden. We adore him. His favorite kind of cookies are oatmeal raisin. I came up with this uber-healthy version for him, to say thanks for the many nice things he has done for us. (It’s also dairy-free for my son, although you don’t have to make yours dairy-free). Although they tasted “healthy,” they were still delicious!
Healthy Oatmeal Raisin Cookies:
*Cream together:
1/2 cup butter (or dairy free substitute)
1/2 cup applesauce
2 eggs
2 tsp. vanilla
1/2 cup sugar
1/2 cup honey
*Sift and add:
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
*Gently mix in:
2 cups oats
1 cups whole wheat flour
1/4 cup barley flour
1/4 cup flax seed flour
1/4 cup wheat germ
1 cup raisins
1/2 cup nuts
*Bake for 10-12 minutes at 350 on a greased baking sheet.
