 Have you noticed that dinner is always better when someone else makes it? My mother-in-law makes this dinner, and it is always so good when she makes it! Well, I try my best to copy her as closely as I can… minus the mushrooms! Maybe someday I will cook with mushrooms, but quite frankly, they terrify me 🙂

Ingredients:
about 6 chicken breasts cut into thirds
3 eggs
2 cups flour
2 cups bread crumbs
s&p
butter
6 slices muenster cheese
1 can chicken broth
(serve with rice and a vegetable)

Directions:
1. Crack eggs to create an egg wash. Lay the flour and bread crumbs on two different plates.
Dip the chicken in this order: egg, flour, egg, bread crumbs. Season with salt and pepper.
I used whole wheat flour for this recipe, and it worked great!
2. Fry the chicken in butter on both sides until golden brown.
3. Transfer to a baking dish. Top with cheese and chicken broth.
4. Bake at 350 for about 20 minutes or until finished.
*Tip: I grind my flour with my Wondermill, and then I store it in my freezer in this container. (It was originally an animal cracker container). I am terribly afraid of weavels (little bugs that get into your flour, this happened to me once). Thankfully, we have an extra freezer, which gives me the space to store large amounts of flour.
