I have a friend. Her name is Tamara. She made these cookies. My husband went bananas. I begged for the recipe. It will forever be a family favorite. Tam will always be my favorite. Thank you Tam. xoxo, Rachel

BANANA COOKIES:
1 1/2 cups shortening
1 1/2 cups brown sugar
2 eggs

4 ripe bananas
1 tsp. vanilla
4 cups flour
2 tsp. baking soda
1/2 tsp. salt
Cream the shortening and brown sugar together. Add eggs, bananas, and vanilla.  Gently mix in flour, baking soda, and salt. Drop by teaspoon onto a cookie sheet. Bake @ 375 for 10 minutes.

FROSTING:
1/2 cup butter
1/2 cup brown sugar
1/2 cup milk or cream
1 tsp. vanilla
4 cups powdered sugar

*Since my son is on a dairy-free diet, all I need to do is substitute the cream with coconut or almond milk, and butter with shortening or dairy-free butter. So easy, yay!


Bring butter, brown sugar, and milk to a boil in a saucepan. Remove from heat. Add vanilla. Stir in powdered sugar to a spreading consistency (you made need slightly more or less).



Frost cooled cookies by dipping them upside down into the warm frosting.
