Last night, we went to a Superbowl party, and I brought some little football sandwich cookies. I was in a really big hurry to get them done, so I used a cake mix to make the cookie part, and in my opinion, they were cute but tasted gross. So all night, I was thinking of how I could have improved my recipe, even on a time crunch. Then I remembered these Chocolate Raspberry Sandwich cookies that I made a while ago, and I remembered how easy they were. I should have just used that recipe for my football cookies! Oh well. With Valentine’s Day coming up, I might make these again!

Here’s the recipe for these delicious Chocolate Raspberry Sandwich Cookies.
(I got the idea from one of my favorite foodies, The Little Red House, and made a few changes of my own, to make them eggless). For the cookies, I used my recipe for Eggless Double Chocolate cookies, leaving out the chocolate chips. Then I made the raspberry frosting, and put it all together. Mmm!

Chocolate Raspberry Sandwich Cookies (Eggless)

Cookie Ingredients:
1 cup + 2 TB butter, softened
1 cup sugar
1 cup brown sugar, packed
1/4 cup milk
1 TB vanilla
2 1/4 cups flour
1 cup cocoa powder
3/4 tsp baking soda
3/4 tsp salt
1/2 pkg chocolate chunks (or chips)
walnuts or pecans (optional)
Frosting Ingredients:
1-2 pints fresh raspberries
1 package cream cheese, softened
3 cups powdered sugar
1/2 tsp vanilla
Directions:
1. Pre-heat oven to 350.
2. Beat butter, sugar, and brown sugar until light and fluffy, mixing at high speed about 3 minutes.
3. Beat in milk and vanilla until blended.
4. Dump in flour, cocoa, baking soda, and salt. Mix at low speed until smooth.
5. Stir in cholocalte chunks and nuts.
6. Grease cookie sheet. Spoon out batter by large spoonfuls, then roll into a ball. Gently flatten, so your cookie will turn out somewhat uniform.
7. Bake at 350 for 8-10 minutes.
8. Let cookies completely cool. In the meantime, make the frosting.
9. Beat cream cheese and powdered sugar together. Add clean raspberries and vanilla last.
10. Frost cookies, and layer to make a sandwich.
